Welcome Pia! Town Tonic's new chef on the team

We’re so happy to welcome Pia to the Town Tonic family as our new chef. Pia will be whipped up some of your favourite dishes in the kitchen so let’s get acquainted!

What were you doing before you joined the Town Tonic team?

Well, I’ve just moved to Christchurch from Wellington, so I’ve been roaming around doing lots of sightseeing before joining the Town Tonic team.

What made you apply for the role?

I spent a lot of time looking around at different restaurants until I found one that I could really see myself working at. Town Tonic’s menu and atmosphere was really exciting, especially given my previous cooking experience in modern Asian cuisine.

Since recently joining the team, what aspects of the job are you really enjoying?

I’m already learning brand new skills when it comes to cooking vegan dishes and I’m loving it, especially the clever desserts! I’m constantly fascinated by the substitutes that are used when cooking vegan alternatives. It’s been a really refreshing look on produce!

What’s your favourite main meal on the Town Tonic menu?

That question is almost impossible! But if I absolutely had to pick one dish, it would be the panko crumbed pork belly, oh but then again I love the cheesy crumpets equally! You just can’t beat that hot sopressa and onion jam combination!

And if you’ve still got room in your belly, what’s your favourite dessert?

I adore the bay leaf panna cotta with that dreamy rhubarb parfait. It’s fragrant, subtle and looks incredible when it’s plated up.
