Meet Town Tonic’s newest apprentice chef, Robert Sies.

How long have you been working for Town Tonic?

I started working at Town Tonic 3 weeks ago and I am thoroughly enjoying myself.

What is your role at Town Tonic?

I’m an apprentice chef, doing my apprenticeship through Service IQ.

What inspired you to have a career as a chef?

From a young age, food has always been an integral part of my life. One of my biggest influences is my family. Every individual member has a passion for food; from growing their own produce and cooking with it to celebrating together over a meal. Being brought up around my parents and grandparents growing their own fresh vegetables sparked an appreciation for home grown ingredients that spurred me on to turn my passion into a career.

What is your favourite part of the job?

My favourite part of the job is watching diners experience and enjoy my creations; it’s the reason we do what we do. Town Tonic’s open kitchen enables us to be an integral part of the customer’s experience which is extremely satisfying from a chef’s point of view.

What is the least favourite part of the job!?

Cleaning the deep fat fryers can certainly be a little frustrating at times but as a chef, I recognise that all of the little things we have to do ensure smooth running in the kitchen day to day.

Where do you see yourself in 5 years time?

After completing my apprenticeship at Town Tonic I’d like to further expand upon my knowledge and gain more experience in the industry. One day I’d love to establish a business of my own.

What is your favourite dish on the menu and why?

All of the dishes on the menu are absolutely lovely but I’d have to say that I’m a sucker for the fried chicken. Really, who doesn’t love fried chicken?
